Marinade Masterminds: Always Marinade That Meat Before Cooking!

You often think of marinating your steak or chicken breast during barbeque season. What if I told you that marinating your meat was actually good for your health? Well, it is. Marinating your beef, poultry and fish can help decrease the carcinogenic heterocyclic amines (hcas) that are produced when meat is grilled or cooked at high temperature levels. Marinating the meat first can reduced these levels by 99 percent, and if you add a touch of rosemary to the marinade that you make, it could help decrease this even more.

There are a few more reasons why using marinates can be beneficial to your meats prior to cooking. For instance, the acidic quality within the marinade can help slow down bacteria growth (when using citrus juices and vinegars.) But remember to always keep your meats soaking with your marinated in the fridge where your meats will stay cool and safe. Another great thing about marinates, besides the flavor, is that the juices can also tenderize the meat for you. This will help with digestion, so that the meat goes down smoothly. Lastly, marinates help keep the meat moist. So, you will never have to hear your mother-in-law tell you that your meat is dry and tough.
